Date Night

Last night Justin had the night off so we declared it "date night".  We don't get them too often since he works evenings all the time.  We plan to try and have a date night at least once a week once we get settled into a routine around here.

Last night we went to Outback because I wanted to try a new chicken dish they have.  It was soo yummy.  CIMG2556Then we had key lime pie for dessert.  It was really tart, but yummy too.CIMG2555

After dinner we rode around for a little while and explored.  We still haven't figured out how to get around outside of our little area.  We ended up just going home and getting in the hot tub for a little while.  It was super relaxing.  I was ready to go to sleep after that, but the night was still young.

So what better to do than pull out the Super Nintendo?!  Haha.. Old School!IMG_2086We got this game, Mario Kart, the other day at a flea market.  We played for a little while, but it wasn't long til we realized it's not as fun as it was when we were kids.  So we just watched some TV and then went to bed.

Speaking of the flea market, though.. That place was awesome.  Super stinkin' hot, but awesome.  Justin got some shoes he has been wanting for a GREAT price, and I got some sunglasses.IMG_2110We plan on going back really soon.  Probably not during the hottest part of the day though.

In other news, I have gone on what feels like 4 billion interviews.  I still haven't heard anything.  Today I went on an interview that lasted an hour and a half!  It was the most in depth interview ever.  And then at the end, she told me I needed to come back at another time for part 2 of the interview!  I couldn't believe it!!!  Anyways, say a little prayer for my job situation if you would.  I'm getting desperate 'cause we need some income flowing in!

changing lanes

I have no idea why, but today my mind started wandering, and I ended up thinking about our drive into Dallas when moving.

I had the gps in my car so I was leading the way with Justin behind me.  I was doing just fine, listening to music and to my Sylvester meow from the passengers seat.  Then all of a sudden we hit traffic.  Yikes.

**Let me say here that in our hometown most roads are two lanes.  The interstate has two, maybe three lanes going each way at the most.**

Okay, so we hit traffic.  Five lanes each way, bumper to bumper, traffic.  My car is full to the ceiling with our stuff.  I have a kitty kennel and a litter box in my front seat.  I can see nothing of what is going on beside or behind me, even with the mirrors.  THEN the gps tells me to exit.  Problem.  I needed to jump over about three lanes of traffic that is flying down the road.

I knew I couldn't do it.  Not without risking a huge disaster.  So, I turned to someone that I trust for help.  I called Justin and had him tell me when it was safe to change lanes.  I could see nothing.  I had to completely trust him when I switched lanes.  He could see all around me and knew how to keep me safe.  He said "go now", and I went.  No asking questions, no hesitating.  I just went.

 

In my random mind wandering today.. I realized that in the same way that I had to trust Justin to help me change lanes, I need to trust my Heavenly Father in all the changes that are going to come in life.  He sees all around me.  He knows the big picture.  He knows my future.  He knows how to get me there safely.  I have to put my trust completely in Him when I can't see or figure out what is going on around me.  I can trust Him and His timing to get me where I need to be.  All I have to do is go when He says go.  Do what He says do.

Upside Down Pizza

It has been a longggg time since I posted a recipe.  It has been a long time since I have cooked, really.  I hope to get back into it now that we are settled.

Today I made one of Justin's favorites, upside down pizza.  It is super-duper easy and quick, so I thought I would share.

Upside Down Pizza:

2 lbs. ground beef

1 cup chopped onions

15-ounce can tomato sauce

1.25-ounce envelope spaghetti sauce mix

8-ounce carton sour cream

2 cups shredded mozzarella

8-ounce can refrigerator crescent rolls

 

Brown ground beef & onion in large skillet over medium-high heat, stirring until meat crumbles.

Stir in tomato sauce & spaghetti sauce mix; cook over low heat 10 minutes, stirring often.IMG_2066

Preheat oven to 350 degrees.

Spoon beef mixture into greased 13X9 baking dish, top with sour cream, and sprinkle with cheese.

Unroll crescent rolls and place over cheese. Bake, uncovered, for 20 to 25 minutes.IMG_2067

The New Place

Our apartment is a pretty nice 2 bedroom, 2 bath.  It's cute and cozy.  Isn't that the word people use to describe a small place? Ha!

But really, it is just perfect for the two of us.  We both agree, though, that before a baby comes, we need something much bigger!

Walk in the front door and there is a bathroom to the immediate right.  It is a teeny tiny bathroom with a stand up shower.  It's just right for Justin.

I still haven't decided what to do with that frame above the towel rack.  I'm thinking maybe all black and white pictures??

Next, on the right there is a little nook where I put a table.  In the basket it where we drop keys, gps, wallet, ipod, etc. so we can easily pick it up on our way back out.IMG_2031

To the left of this area is our guest bedroom.  Right now it's not much of a bedroom at all.  Justin uses this room to listen to music and pray.  Eventually we will put a sleeper sofa or a futon on the long empty wall for our guests.IMG_2020IMG_2023See the bookcase.. here is a close up of the ridiculous amount of childrens books that I have even though I have no children.    IMG_2026IMG_2027

Next up is the living room.  I really like our living room.  I still have some work to do in here: getting artwork for about the couch, lining the curtains and making them longer, finding something for above the tv, and figuring out something to do under the tv table.  Here it is so far...IMG_2052IMG_2054IMG_2056

Attached to the living room is the dining area.  We got a small two person table, but it didn't have hardware to put it together.  We are still waiting on it!  IMG_2060

I love the sliding glass doors leading to the balcony.  They let in so much light.  Sylvester really likes them too.  He loves looking out.

golf, move, and accident

To spend time with some of Justin's family, we decided to play golf before we had to move.  When I say "we" played golf, I definitely mean "they".  I sat in the cart and took pictures and watched.

It was hot, but it was fun.  Justin's dad, sister, brother-in-law, and uncle went with us.

After golfing we had to do last minute packing and a little cleaning before heading out on the road to Texas.

The drive took us about 5 hours or a little more.  We each drove 1 vehicle and traveled caravan style.  We stopped more times than I liked.  The reasons were the norm.. gas and food and bathroom breaks.  And then this...Imported Photos 00075Traffic came to a very sudden stop, and needless to say Justin didn't have time to stop.  Ouch!  But, he wasn't hurt and the vehicle he hit wasn't hurt.  So I guess that's not so bad.  At least it can be fixed, right?!  :)

Also, my poor kitty had to ride like this the entire time.Imported Photos 00068He sat in the front seat beside me, but was not the least bit happy about being in that thing!  He meowed and turned circles almost the entire time.  I felt so sorry for him.  He was a very happy kitty when we finally let him out!

After moving an entire house worth of stuff/furniture/boxes up 4 flights of stairs, we were all worn out.  But the day was only half over.
